Roasted Cauliflower Steaks

For something light and healthy for dinner, this Roasted Cauliflower Steak is perfect! Pair with a yummy salad and some rice and you’ll have dinner done in no time!

1 Head Cauliflower

2 Tablespoons Olive Oil

Salt and Pepper

Green Herb Sauce, Optional

  1. Preheat the
    oven to 400°F.
  2. Trim the
    bottom ½ inch off the cauliflower stem, ensuring there is plenty of stem
    left to hold the steaks together.
  3. Slice the
    cauliflower into 1-inch steaks. The two ends will not stay together in
    steaks, so slice them off and add to a baking sheet. You should be able to
    slice 2-3 steaks from the middle of the cauliflower, with the stem to keep
    the steak whole. Transfer all of the cauliflower to a baking sheet.
  4. Brush the
    cauliflower with olive oil and sprinkle with salt and pepper. Roast for 20
    minutes, until fork-tender and lightly browned.
  5. Serve the
    cauliflower steaks drizzled with pesto or herb sauce.
