1 Head Cauliflower
2 Tablespoons Olive Oil

- Preheat the
oven to 400°F. - Trim the
bottom ½ inch off the cauliflower stem, ensuring there is plenty of stem
left to hold the steaks together. - Slice the
cauliflower into 1-inch steaks. The two ends will not stay together in
steaks, so slice them off and add to a baking sheet. You should be able to
slice 2-3 steaks from the middle of the cauliflower, with the stem to keep
the steak whole. Transfer all of the cauliflower to a baking sheet. - Brush the
cauliflower with olive oil and sprinkle with salt and pepper. Roast for 20
minutes, until fork-tender and lightly browned. - Serve the
cauliflower steaks drizzled with pesto or herb sauce.
