4 Ears
of Corn, Husks Removed
6 Slices
Bacon
½ Red
Onion, Diced
1 Garlic
Clove, Minced
1 Jalapeno,
Deseeded and Minced
4 Scallions,
Minced
Salt
and Pepper to Taste

- Remove the Corn Kernels from the
Cobs. - Heat a skillet over medium heat.
Add the Bacon and cook until crisp, turning once. Transfer to a paper
towel-lined plate. When cool, dice the Bacon. - Pour out all but one tablespoon
of Bacon fat from the skillet and return to medium heat. Add the Onion, Garlic,
Jalapeno, and Scallions (reserving some of the green tops for garnish).
Cook for 3-4 minutes, until tender. - Stir in the Corn Kernels and
cook for another 3 minutes, until heated through and crisp-tender. Add in
the Bacon and season with Salt and Pepper. - Garnish with Reserved Scallion Greens
to Serve.
