- Preheat the oven to 425°F.
- On a baking sheet, toss the Tomatoes
with 1 tablespoon olive oil and salt. Roast for 10-15 minutes, or until
they burst open. - Meanwhile, bring a large salted
pot of water to a boil. Add the pasta and cook until al dente, 2-3 minutes.
Reserve 1 cup of pasta water and drain. Return the pasta to the pot, toss
with the remaining olive oil, tomatoes, and mozzarella. Add pasta water as
needed to create a silky sauce. - Garnish with fresh basil to
