Cucumber Gazpacho

Cucumbers, Roughly Chopped

½ Jalapeño,
Deseeded

¼ White
Onion, Roughly Chopped

1 Lemon,
Juiced and Zested

2 Tablespoons
Olive Oil

1 Teaspoon
Honey

1 Cup
Buttermilk

¼ Cup
Plain Greek Yogurt or Sour Cream

1 Teaspoon
Salt, to Taste

¼ Cup
Packed Fresh Basil

Tomato
and Cucumbers for Garnish, Optional

  1. Place all ingredients except the
    garnish in a high-speed blender and purée until smooth. Adjust seasoning
    with salt and pepper.
  2. Serve garnished with sliced Tomatoes,
    Cucumbers and Basil.
