1 Cup Wild or Brown Rice (2 Cups Cooked)
4 Bell Peppers
1 Small Onion, Diced
½ Cup Chopped Walnuts
1 Garlic Clove, Minced
½ Teaspoon Dried Oregano
1 Tablespoon Olive Oil
Salt and Pepper to Taste

- Place the
rice, 2 cups of water and a pinch of salt in a saucepan. Bring to a boil,
cover, and simmer for 45-50 minutes, until the grains are tender. Preheat
the oven to 350°F. - Slice the
top off the bell pepper, remove the seeds, and dice the top. - Place the
prepared peppers in a loaf pan or baking dish, standing up. - Combine the
rice, chopped bell pepper, onion, walnuts, garlic, oregano, olive oil, and
a pinch of salt and pepper in a mixing bowl - Fill the peppers
with the rice and vegetable mixture. - Pour ¼ inch
of water into the baking dish, cover tightly with aluminum foil, and bake
for 20-25 minutes, until the pepper is soft.
