2 Tablespoons Unsalted Butter
2 Large White Onions, Sliced Thinly
2 Garlic Cloves, Minced
2 Teaspoons Fresh Thyme Leaves
12 Ounces Angel Hair Pasta
½ Cup Bread Crumbs
1 Teaspoon Olive Oil
4 Ounces Crumbled Feta Cheese
Salt And Pepper, To Taste

- Melt the
butter in a large skillet over medium heat. Add the onions, garlic, thyme,
and ½ teaspoon salt, and lower the heat to low. Cook, stirring regularly,
until the onions are caramelized and jammy, about 30 minutes. - Meanwhile,
bring a large pot of heavily salted water to a boil. Cook pasta according
to package instructions. Reserve 1 cup of pasta water and drain the pasta.
- In a small bowl,
combine the bread crumbs, olive oil, and ¼ teaspoon salt. Spread out on a
baking sheet and broil for 1-2 minutes, until golden and toasted. Remove
the breadcrumbs from the oven and set aside. - Add the
cooked pasta to the caramelized onions, along with ¾ cup pasta water. Stir
and add more water as necessary to create a silky sauce that coats the
noodles. - Stir in the
feta to combine fully. Season with salt and pepper and top with toasted
breadcrumbs to serve.
