Asian Potato Salad

Looking for a great side to make for your meal tonight? This blends so go with just about everything. Plus, who doesn’t love potatoes?

1 Pound Fingerling Potatoes

½ Red Onion, Diced

2 Teaspoons Olive Oil

1 garlic Clove, Minced or Grated

1 Tablespoon Fresh Ginger, Minced or Grated

1 Teaspoon Soy Sauce

½ Teaspoon Sriracha, to Ttaste

1 Lime, Juiced

¼ Teaspoon Salt, to Taste

2 Scallions, Minced


  1. Set a steamer inside a medium saucepan with 1 inch of water. Place the potatoes inside, and bring to a simmer over medium heat, covered. Steam the potatoes until fork-tender, 10-15 minutes. Drain and let the potatoes cool.
  2. When the potatoes are cool enough to handle, slice them in half.
  3. In a serving bowl, whisk together the olive oil, garlic, ginger, soy sauce, Sriracha, lime juice, and salt. Fold in the potatoes, onion, and scallions. Season with salt and Sriracha.
