2 Teaspoons Chile-Garlic Sauce
1 Lime, Juiced, Plus More for Serving
½ Teaspoon Kosher Salt
Black Pepper, to Taste
½ cup Crumbled Queso Fresco or Feta Cheese
Fresh Cilantro, Minced

- Preheat half
of your grill at high heat, covered, for 10 minutes. - Brush the
corn with olive oil. Place the corn on the grill over the heat, cover, and
cook, turning every 1-2 minutes, until charred, about 10 minutes. - Mix together
1 tablespoon olive oil, chile-garlic sauce, lime juice, and salt in a
small bowl. Brush the sauce on the corn a minute before removing it from
the grill, coating all sides. - Transfer the
corn to a platter, sprinkle with cheese and cilantro and serve with lime
wedges.
