Who is up for some green beans, honey and you guessed it – BACON? This dish is a great added side to any meal. Heck, it’s even a great eat on its own.

1 Pound Green Beans, Trimmed
4 Slices Smoked Bacon
2 Garlic Cloves, Minced
½ Lemon, Juiced
2 Teaspoons Honey
½ Teaspoon Kosher Salt

- Bring a
large pot of salted water to a boil. Have a large bowl of ice water
nearby. Submerge the green beans in the boiling water for 2 minutes, until
bright green and crisp-tender, being careful not to overcook. Then
immediately transfer to the ice bath to stop the cooking process. Drain
and pat the green beans dry. - Heat a large
skillet over medium heat. Add the bacon and cook until crispy and the fat
is rendered, about 5 minutes, flipping halfway through. Transfer bacon to
a paper towel-lined plate to cool. When cool enough to handle, crumble the
bacon into small pieces. - In a small
bowl, whisk together the honey and lemon juice. If you heat the honey in
the microwave for 30 seconds, it’s easier to mix. - Pour out all
but 2 tablespoons of bacon fat from the skillet and return it to medium
heat. Add the garlic and cook until fragrant, about 1 minute. Add in the
green beans, bacon, honey, and lemon juice and cook, stirring, until fully
coated and heated through, 1-2 minutes.
