Green bean nation – this one is for you! A simple, yet flavorful creation which has you realize why this little green pod is just so good. This side is a great addition to any meal.

1 Pound Green Beans, Trimmed
½ Cup Walnuts, Roughly Chopped
Kosher Salt and Black Pepper, to Taste
1 Tablespoon Olive Oil
1 Shallot, Minced
1 Garlic Clove, Minced
½ Teaspoon Red Pepper Flakes
½ Lemon, Juiced
Fresh Cilantro, Minced, for Garnish [/recipe-ingredients]

large pot of salted water to a boil. Have a large bowl of ice water
nearby. Submerge the green beans in the boiling water for 2 minutes, until
bright green and crisp-tender, being careful not to overcook. Then
immediately transfer to the ice bath to stop the cooking process. Drain
and pat the green beans dry.
- Toast the
walnuts by heating a large skillet over medium-high heat. Add the walnuts
and toast, stirring constantly, until starting to brown. Transfer the nuts
to a small bowl and sprinkle with a pinch of salt.
- Heat the
olive oil in the now-empty skillet over medium-low heat. Add the shallot
and cook until softened, about 3 minutes. Add the green beans and garlic
and cook, stirring until the green beans are heated through and the garlic
is fragrant. Season with red pepper flakes, salt, and pepper. Squeeze the
lemon juice on top.
- To serve,
sprinkle the green beans with toasted almonds and minced cilantro.
