Kale Grilled Cheese with Pear

A new take on an old love. The flavors just meld together. This sandwich makes a great lunchtime or anytime snack. Be careful, you may just find yourself making more than one!

1-2 Tablespoons Olive Oil

1 Small Bunch Lacinato Kale, Roughly Chopped, Any Woody Stems Removed

1 Garlic Clove, Minced

Kosher Salt, to Taste

2 Slices Sourdough Bread

2 Teaspoons Chile-Garlic Sauce, Harissa or Hot Pepper Jam

3 Slices Sharp Cheddar Cheese

¼ Pear, Sliced Thinly

  1. Heat the oil a large (preferably cast iron) skillet over medium heat. Add the kale, garlic and a pinch of salt and cook, stirring, until the kale wilts, about 3-4 minutes.
  2. Lay the bread on a work surface and spread each piece with chile-garlic sauce. Place the pear slices on top, then the cheese. Finally, add the sautéed kale and close the sandwich with the remaining slice of bread. Remove any leftover kale from the skillet to serve on the side.
  3. Heat the remaining olive oil in the now-empty skillet over medium heat. Gently place the sandwich in the skillet and cook until the golden brown, about 3 minutes. Flip and brown the other side, about 3 minutes more.
